In many places around the globe, Sunday is a day of rest. At Hotel Arts Barcelona, the end of the work week is marked with SVT: Sunday Vermouth & Tapas.

The weekend celebration embodies the best of Mediterranean living: a stylish terrace, a spectacular view of the sea (along with Frank Gehry’s El Peix gold fish sculpture), a lounge music soundtrack and great food and drinks.

The lunch menu features Mediterranean dishes from chef Sergi Arola and includes patatas bravas, Spanish omelet and other traditional tapas. Of course, no Spanish meal is complete without a good drink. Behind the bar, Diego Baud creates signature vermouth cocktails that pair perfectly with Arola’s cuisine and highlight prestigious vermouth brands including Dos Deús Rojo, La Quintinye Roja and Cinzano 1757.

His 45 Your Soul cocktail, exclusive to SVT, incorporates the “quintessential aperitif” in a way that makes “the flavors dance in your mouth,” he says. The very name, aperitif, comes from the Latin verb “to open,” Baud says, “which makes perfect sense as it opens the appetite.”

Ingredients

  • 1½ ounce Dos Déus Vermut  
  • 1½ ounce Lustau Amontillado Sherry
  • 1 dash Angostura bitters
  • 1 lemon wheel
  • 1 orange wheel
  • Rosemary sprig
  • Dehydrated lemon wheel
  • Olive

Preparation

Muddle lemon and orange wheels to release oils and juices. Add ice, vermouth, sherry, and bitters; shake vigorously. Double strain into a Nick & Nora glass, and garnish with rosemary sprig, olive and dehydrated lemon wheel.
