THE ART OF GUACAMOLE
When it comes to guacamole, The Ritz-Carlton, Dallas believes “strongly in the classic flavors.” Each evening at six, the hotel Guacamologist™ hosts what is now a guest favorite, a ritual celebrating the flavors and sense of community synonymous with Texas.
Held in the candle-lit lobby, the nightly experience invites guests to sample hand-blended guacamole, created with fresh, local ingredients and accompanied by warm, crisp tortilla chips. A sample of chef Dean Fearing’s signature margarita and tastings from the hotel’s Tequila Vault are included. Guacamologists™ spend time perfecting their technique, which they teach to guests of all ages.
Ingredients
4 ripe avocados
1 ½ jalapenos
3 Roma tomatoes
½ small red onion, diced
1 bunch cilantro, chopped
½ lime
2 TB sour cream
2 TB salt and pepper
Roasted garlic
Tortilla chips
Preparation
Step 1. Mash the avocados in a large bowl, mixing in the jalapeños, tomatoes, onion and cilantro.
Step 2. Squeeze the lime over the mixture.
Step 3: Stir in the sour cream, salt and pepper.
Step 4: Top with roasted garlic and serve with tortilla chips.

The Guacamologist™ cart is made from remnants of the same honey onyx and wood found throughout the hotel’s Fearing’s Restaurant. The experience is accompanied by a sample of Dean Fearing’s signature margarita and the hotel’s Tequila Vault tasting.
